Recipe: Banana Pancakes with Warm Blueberry Drizzle
Serves: 1 person
Preparation: 10 mins
Cooking: 7 mins

 

Ingredients:

1 tsp coconut oil (if you’re making them in batches use a little coconut oil to grease the pan a bit each time)
1 banana
2 eggs
A pinch of cinnamon
A dash of vanilla essence

For the topping:
1 large handful of blueberries
1-2 tbsp natural yoghurt
1 tsp honey to drizzle on top (not necessary but tasty)
A handful of almond flakes
 

 

Method:

1. Place 1 banana, 2 eggs, cinnamon & vanilla into a food processor, or mash in a bowl
2. Whizz / mash
3. Put the blueberries in a sauce pan and heat up on a medium heat (keep stirring)
3. Heat up the coconut oil in a non-stick frying pan
4. Using a ladle (about 1 per pancake), place some of the mixture onto the pan and cook until golden each side
5. Repeat until you have a nice stack of pancakes.
6. The blueberries should be done by now – they will burst and the juice will make a sauce
7. Serve – pancakes first, followed by yoghurt, honey, blueberry sauce on top & sprinkle of almond flakes
