Flavour of the Month: Holy Guacamole
Jess, our resident Nutritionist has created a bulletproof guacamole recipe, which will certainly leave your friends asking for more!
This versatile recipe is great as a snack on top of some rice cakes or wholemeal toast, or to add to various dishes including delicious salads, fajitas and homemade vegetarian chilli/chilli con carne.
Avocados are filled with fibre and healthy monounsaturated fat, meaning they are the perfect fill-you-up food. They are also a great source of vitamins C, E, K and B6. Including healthy fats in the diet is very important, as they support skin health and may even help boost the immune system!
Recipe
Serves: 1
Prep time: 10 minutes
Shelf life: Up to 2 days (but make sure you store it with the stone of the avocado to prevent it from going brown)
Ingredients
1 medium/large avocado
Juice of ½ a lime
5-6 cherry tomatoes
1 tsp diced red onion
Salt
Pepper
(Optional: add some jalapenos for a kick of heat)
Method
- Cut the avocado in half, remove flesh from the skin and mash it with a fork.
- Dice the red onion and cherry tomatoes and combine in a bowl with the avocado.
- Add the juice of the lime, salt and pepper to taste and mix everything together.
