Flavour of the Month – Veganuary: Sweet Potato Bake
Whether you have cut out or cut down on meat, or you just fancy a warming wintery plate of deliciousness, here’s a simple wholesome dish from Jess, our resident nutritionist. Sweet potato is a rich source of fibre as well as providing essential vitamins and minerals, and this recipe is super quick and easy to prepare!
Sweet Potato Bake
Serves: 2
Prep time: 15 minutes
Cooking time: 30 minutes
Ingredients
2-3 medium sweet potatoes
50g cherry tomatoes
3-4 sprigs of fresh basil
2 tbs olive oil
½ red onion
1 tsp garlic granules
Salt & pepper
Method
- Dice the sweet potato into roughly equal sized cubes. Drizzle over the olive oil and season to taste with garlic granules, salt and pepper.
- Slice the cherry tomatoes and red onion into medium slices.
- Stir all of the ingredients together in a small bowl and then place in a suitable baking dish.
- Top with the fresh basil, and bake for 30 minutes, or until the sweet potato is soft.
We recommend serving with couscous and salad for a tasty tagine-style meal.
