Flavour of the Month – Veganuary: Sweet Potato Bake

Whether you have cut out or cut down on meat, or you just fancy a warming wintery plate of deliciousness, here’s a simple wholesome dish from Jess, our resident nutritionist. Sweet potato is a rich source of fibre as well as providing essential vitamins and minerals, and this recipe is super quick and easy to prepare!

Sweet Potato Bake

Sweet potato bake
Serves: 2

Prep time: 15 minutes

Cooking time: 30 minutes



2-3 medium sweet potatoes

50g cherry tomatoes

3-4 sprigs of fresh basil

2 tbs olive oil

½ red onion

1 tsp garlic granules

Salt & pepper



  1. Dice the sweet potato into roughly equal sized cubes. Drizzle over the olive oil and season to taste with garlic granules, salt and pepper.
  2. Slice the cherry tomatoes and red onion into medium slices.
  3. Stir all of the ingredients together in a small bowl and then place in a suitable baking dish.
  4. Top with the fresh basil, and bake for 30 minutes, or until the sweet potato is soft.
